Begin with the pork shanks. Remove any unwanted fat but leave enough to keep the flavor. Use a paper towel and pat them dry. Place your peppercorns in a clean pepper mill. Brush the shanks lightly with some olive oil. Now crack some large flakes of pink pepper over the shanks as desired. Crack some sea salt over them too. Good idea to sprinkle them with tarragon and some garlic powder. Now flip them over and do the same to the other sides.
Get a square sheet of aluminum foil for each shank and place a stalk of rosemary on each. Now place a shank on top of each stalk. Now put another stalk on top of them. wrap them up and seal leaving space inside like a tent. Now grill them on high until cooked. thru.
Cook some penne regate pasta and drain the water now add lots of grated sardo and mix well. Cook some peas and mix with the pasta. For each plate you place a mound of the pasta mixture and a pork shank on top of it. Grate a little sardo on top of each shank and sprinkle some chopped parsley over each. This meal will please the pork lover in you.

Put some olive oil into a skillet and then place the flounder into the skillet. Then spray lemon juice on the fillets, along with throwing in the lemon flavored gummy bears. Allow the bears to reduce, so we will have lemon flounder fillets. Cook on the low setting on your skillet until they are.

While those are cooking, keep a watchful eye on them as they finish quickly http://mafiamaniac.org/smile/glare.gif , let's start on our desert as this will take longer. We will be making a nectarine and cottage cheese panna cotta! http://mafiamaniac.org/smile/tongue.gif

Now usually you would use milk and cream for panna cotta, but since Slick gave us cottage cheese... yup... use that instead! http://mafiamaniac.org/smile/biggrin.gif Maybe mix in some real milk and cream too. http://mafiamaniac.org/smile/mellow.gif

Then we will use nectarine gelatin along with the fresh nectarines, along with confectioner's sugar. I would definitely recommend researching the best way to make your panna cotta though, so it sets correctly. I haven't tried to make a panna cotta yet so I wouldn't know. http://mafiamaniac.org/smile/idk.gif

As soon as your flounder fillets are done, get them out onto plates and serve those with a side of green beans with a lemon compound butter to compliment both the fish and the beans.

Wednesday I begin my new full time gatehouse and security patrol with a pick-up. Got to learn how to capture rattlesnakes and relocate them. There is 855 square acres including a 19 hole golf course and tennis courts. Free meals is what really attracted me and will be making more money. Okay. This is unusual but not bad.

Cut the goose into pieces and saute in bacon grease. Add salt and pepper to taste. Now take the holly leaves and put them in a bowl of mixed greens. You can use lettuce or even water cress. Add to that some sliced shallots, some halved cherry tomatoes and a cup of chopped walnuts. Combine all the ingredients by tossing. Now use the cranberry juice with some balsamic vinegar and 3 tablespoons of fresh lemon juice. Stir it up well with a whisk. That is the dressing to go over the salad. Sprinkle some fresh feta cheese over the top and serve. Yum Yum. http://mafiamaniac.org/smile/slap.gif
Take the fruit cake and crumble it up on to a cookie sheet then spread it out evenly. Now get some maple syrup and drizzle it over the top. Bake for 14 minutes or so. Cut into squares. Place a square on a dessert dish. Cover it with whipped cream. Now put another square on top then more whipped cream. Top each dessert with chocolate flakes and some grated orange rinds then serve.

We begin with the cherries. Take off the stems and cut the cherries in half. Place them into the vodka stinger and let soak overnight or about 12 hours.
Put the pork belly in a skillet and brown it well on all sides. Season it well first. Place it in a crock pot with some pork stock and lots of sliced onions and fresh tarragon. Set the crock on high for 6 hours. Turn it over after 3 hours. Once it is done you may let it cool on a plate under a foil tent. Now you chop it up roughly, then chill.
Prepare some iceberg lettuce into a salad bowl. Crush the tortilla chips and add them to the bowl. Do not make crumbs. Chips should be small pieces. Now drain the cherries well and add them to the bowl. At this time you add the pork pieces and toss well. Now add all your favorite salad ingredients. Make a cherry red wine vinaigrette and pour over the top. Toss the salad well and serve with a chilled bottle of Santa Lucia Highlands Pinot Noir. Enjoy!!! http://mafiamaniac.org/smile/dance.gif
